Sunday morning my teenage daughter, Fawn, decided to make a bath of yummy Banana Chocolate chip Muffins. She used the recipe from Jane Doiron's latest cookbook, Make-Ahead Meals for Busy Moms. Since, we do not have a mini muffin pan, Fawn used a 12-count muffin pan. And, she added more chocolate chips. The muffins are very good even big people enjoy eating them. lol



Mini Banana Chocolate Chip Muffins

An easy recipe that kids enjoy!

1/2 cup butter, softened
1 cup sugar
2 eggs
2 medium-size, very ripe bananas, mashed
2 cups flour
1 teaspoon baking soda
1/2 cup pecans, chopped
1/2 cup mini chocolate chips

Preheat the oven to 350.F. Coat 24 mini muffin cups with nonstick spray. (There will be enough batter to make a little more than 24.) In a large bowl, cream teh butter and sugar together. Add the eggs, beating until smooth. Add the bananas and mix until combined. In a small bowl, mix the flour and the baking soda; add to the creamed mixture. Fold in the nuts and chocolate chips. Fill each muffing cup with the batter above the rim. Bake for about 15 minutes or until a toothpick inserted in the center comes out dry. Cool the muffins in the pan for about 5 minutes, before you place the muffins on a wire rack to cool.

Cool completely, place in a labeled freezer bag, and freeze up to 2 months.
